Using the recently updated version of this dish by Ottolenghi in his book ‘Simple’, our Chicken Marbella is marinated overnight with capers, marjoram and red wine vinegar then slow braised.
We use boneless chicken thighs so they remain moist, and finish the dish with medjool dates and olives. The final flavour is a perfect balance of sweet and sour, serve with a salad or a simple roast vegetable dish to complete the meal.
A generous serving for 2-3 people.
